Delphiniums have been admired since ancient Greek and Roman times, named after the Greek word delphínion, meaning “little dolphin,” because the flower bud resembles a dolphin’s nose. They were widely grown in medieval monastery gardens for their vivid blue pigments and were even used to make early inks and dyes.
